For my Recipe-of-the-Month, I have chosen Risotto alla Maranese (Marano-Style Seafood Risotto). This risotto is named after the coastal village of Marano Lagunare, where chefs typically use local wedge shell clams—called “telline” or “arselle”—along with squid, langoustines, and occasionally mussels.
