baccala in biancoFor my Recipe-of-the-Month, I have chosen Baccalà in Bianco (Salt Cod Purée). As the iconic Carnevale di Venezia is already well under way this year, I can’t help reminiscing about some of my favorite Venetian meals. One of my favorite dishes is baccalà mantecato—often referred to as baccalà in bianco in Trieste, where it is a popular snack at many of the city’s traditional buffets.
