orzotto ai funghiFor my Recipe-of-the-Month, I have chosen Orzotto ai Funghi (Barley with Mushrooms), in honor of this month’s Festa dell’asparago di bosco, del radicchio di montagna e dei funghi di primavera. Held annually in the Carnian village of Arta Terme, this festival celebrates three bounties of springtime: wild asparagus, mountain radicchio, and mushrooms.
