Risotto alla MaraneseFor my Recipe-of-the-Month, I have chosen Risotto alla Maranese (Marano-Style Seafood Risotto). This risotto is named after the coastal village of Marano Lagunarewhere chefs typically use local wedge shell clams—called “telline” or “arselle”—along with squid, langoustines, and occasionally mussels.
